Cooking Class 2

So the summer camp had their second cooking class and I taught them how to make macaroni and cheese from scratch.

We also made a fruit salad with plums, nectarines and grapes with a lime honey dressing, and a blueberry/cucumber salad.
The cucumber salad was a Rachel Ray recipe.
Best part was kids coming back for seconds on the cucumber salad!

I would love to learn how to make a good homemade macaroni and cheese. I still use the box. Everything looks delicious. Lucky kiddies.

Hi Joanne,
This is so easy - You can have my recipe!
Mac and Cheese
1 box(1LB) rotini
(holds cheese better!)
1pkg Cheddar cheese(16oz)
1pkg monteray jack cheese(8oz)
1 egg
1/2 cup half and half
1/2 cup 2% milk

Boil water in large pot.add salt and bit of oil to keep from sticking(1 tsp.)

Cook rotini noodles for ten minutes after placing them in water and letting water come to boil again. Remove from pot draining all water. Place in cooking dish 9 by 13.

Add half of cheddar cheese and all of monteray jack. stir in and season with salt and pepper.

In separate bowl beat egg then add milk and half and half and whisk together, pour over noodles and cheeses then stir. Add remaining cheese over top to cover .

cook in preheated oven of 375 degrees for 40-45 minutes and you are done except for the compliments. :)

You did not use egg... you used ground flaxseed! I saw you.
